Rubies in the Rubble started in 2012 by Jenny Costa, by experimenting with family recipes by using surplus fruits and vegetables, realizing the amount of food waste problem in the UK. Since then, they came a long journey to make delicious condiments from surplus fruits and vegetables as much as possible that failed to meet aesthetic requirements and would have gone to waste.
